BTW, if anyone is interested, Bookbinders get their snapping turtles farm-raised from the South. Oddly enough, part of the reason I wanted in the story is my brothers used to trap 25-35 pounders in the swamps of Jersey, either for Dad to make snapper soup with (enough to last a year) or to sell (@ $1 a pound, which was good money for kids growing up in the 60s) to Bookbinders. Farmed-raised snappers only live until they're 8-10 pounds.
All that, and they'll be no discussion about "locally grown" in my story, because the South's not local.
